Amar Bangla: Cuisine that's more than just food

Bengali food has a significant role in its culture. Today's "Bengali food" is the peak of centuries worth of experiments using ingredients from all around the world. The food culture in Bengal has many Kings, Zamindars, Nawabs, and British officials to thank, as well as the local sweet maker. Such democratic change and acceptance of all types of cuisine are uncommon around the globe. Bengalis frequently assert that South Asia's most varied palates may be found in their food.

Bengali cuisine offers so much more than simply fish and rice, despite the fact that most people equate it with just seafood. Over time, it has been impacted by several civilizations. Due to long-standing and significant economic ties with many different regions of the world, the cuisine has acquired international and South Asian influences. The cuisine has been influenced by the region's many cultural influences, including Mughal, British, Dutch, and French influences. The development of Bengali cuisine was also impacted by social and economic constraints, as evidenced by widows who invented a new category of dishes using only inexpensive vegetables and spices. Due to religious limitations, mealtimes have changed since Bengal was partitioned.

Bengali cuisine is known for its unique characteristics, which include a hot palette, the use of a large number of herbs, spices, and roots, and the cooking of various vegetable dishes. A traditional Bengali meal typically starts with a bitter preparation called 'Shukto', followed by leafy vegetables, pulses, and a variety of vegetables, along with fish, mutton, or chicken. Bengali dishes are conventionally divided into four types based on their texture and consistency. The cuisine uses a variety of ingredients, including rice, milk, yogurt, fish, meat, vegetables, herbs, spices, and roots. Mustard oil is the medium of cooking, which adds its own pungency to the dishes. Overall, Bengali cuisine is a rich and flavorful cuisine that has evolved over time
